Before we dive in, please innerstand that these pies are so good I still think about them every so often. They're #soft, #pillowy, #creamy, #flavorful, and #plantbased. Yes! They are #veganoatmealcremepies, and I am more than excited to share this delicious recipe with you all!
How did you come up with this?
Back when I ate on a western diet, my favorite gas station snack was oatmeal creme pies, now I was never a double-decker girly since it was personally too much sugar in one sitting. But a typical, single-layer oatmeal creme pie? Count me in! Now that I am #vegan, #plantbased and mostly #raw. I have decided to recreate a blissful childhood memory and what is more special than sharing it with my community?

PLant-based oatmeal creme pies!
Ingredients:
Rolled oats (I just found out you want to make sure your oats are glyphosate free, glyphosate is a key compound in round up and poisons, so double check the brand you are using)
Molasses (slightly optional)
Almond flour (You can use all-purpose just be mindful of the breakdown it has on the body)
Baking powder
Cane sugar (This can be subbed for date sugar, palm sugar, or coconut sugar)
Ground nutmeg
Powdered sugar (You can make your own with cane sugar and cornstarch, just blend them together)
Pink Himalayan Salt (Sea salt also works fine but preferably not iodized)
Flax seed (This is to make our 'egg' substitute)
Vanilla extract (Make sure it does not contain animal derivatives)
Plant-based Milk (My favorite for baked goods or 'thicker' recipes is oat!)
Lemon extract (Fresh lemon juice could work just adjust the measurement)
Vegan butter (This is completely optional, I used it this time but the next recipe will not have any as this is a processed ingredient. Coconut whipped cream can be a substitute but be mindful of the very distinctive flavor)
Baking Soda
no more Mr. nice pie, what do I need?
Step 1: Make your flax-seed egg before you do anything else! Mix 2 tablespoons of ground flax-seed with 6 tablespoons of water, stir and let it sit to thicken.
Step 2: Preheat oven to 350 degrees
Step 3: Place 1 cup of butter, 3/4 cups of cane sugar, 2 teaspoons of vanilla, 1/3 cup of molasses, and 2/3 cups of milk in a bowl and cream until completely combined.
Step 4: Add 1 1/2 cups of almond flour, 2 cups of oats, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of pink Himalayan salt and mix until thoroughly combined.
Step 5: Add your flax-seed egg and combine
Step 6: Let your dough sit for 10-15 minutes, this allows your flour and dry ingredients to become hydrated and prevents dry/crumbly baked goods!
Step 7: Collect 2 tablespoons of dough and form them into balls and place them onto a lined baking sheet (Place 2-3 inches apart horizontally and 1-2 inches vertically on your sheet)
Step 8: Bake for about 8-9 minutes, the time will differ depending on your cookie preference, this time frame will make your cookies soft, and slightly chewy with a crispy bottom.
Step 9: Pull your cookies out of the oven and allow them to cool on the baking sheet, do not fall into temptation, and eat them now! I promise the end result will be worth the wait!

Frosting time! Let's all chill and pipe down!
Step 1: Take 2/3 cups of butter, 1 1/2 teaspoons of vanilla extract, 1/8 teaspoon of salt, and cream until smooth consistency
Step 2: Add in 2-3 cups of powdered sugar, add the cups in one at a time to ensure your frosting will be smotth and fluffy
Step 3: Scoop your frosting into a piping bag or grab your spatula/spoon or even ice cream scoop!
Step 5: Line one side of your cookie with a ribbon from the outside of the cookie all the around the circumference until you meet the middle. Another option would be to scoop and frost one side of your cookie until you think there is enough.

Final Step: Put both sides of your cookies together and enjoy!!
