Plant-Based Oat & Sweet Potato Cookies w/ cinnamon Vanilla Icing

This is probally the best cookie recipe I have made, however, more are coming so I'll wait to say they are THE best!
People often ask me how I come up with recipes and the answer is always this simple: "I find ingredients in my kitchen and use them". I'm serious, I never truly know what I am making until I get about halfway through the process but this way always turns out much tastier than planned recipes.
Plant-based oat and sweet potato cookies with cinnamon vanilla icing!
What all you will need
Before you rush to the comments, let us all please keep in mind this is 'Chaotic Recipes' where measurements are not exact and timers are not set!
1 cup sweet potato puree (I made my own but feel free to use store-bought if necessary)
1 cup rolled oats
1/2 cup oat milk (This can be subbed for any other milk but I found that oat gives the creamiest texture)
1/4 cup cane sugar (preferably not white sugar but if necessary, sure)
1 teaspoon pure vanilla extract
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon pink Himalayan salt
2 tablespoons flax seed egg (Can be subbed for 'Just egg' or any other vegan egg alternatives but this is the best non-processed option)
1/4 teaspoon ground nutmeg (fresh would be best!)
1/4 teaspoon ground ginger (powder is the best option to avoid overpowering the other flavors)

I have my ingredients, what's next?
I just want to take a minute to reissue this notice that this part will not be exact! Use your baking skills and discernment to help make the perfect cookies for you.
1. Preheat your oven to 350°F and line 2 baking sheets with parchment paper and apply a light layer of plant-based oil (I found coconut works best).
2. Take 2 tablespoons of flax seed (ground or milled is best) and mix with 6 tablespoons of water. Let this sit for 5-7 minutes
3. Peel and chop 2-3 small to medium-sized sweet potatoes. Boil until tender and transfer to a blender. Blend until a smooth consistency (If you are using store-bought puree, disregard this step)
4. Blend 1 cup of oats with 4 cups of water until smooth, strain, and store in an airtight container in the fridge until needed (If you are using store-bought milk or already have premade milk, skip this step)
5. Add puree, spices, egg, vanilla, baking powder, sugar, oats, and oat milk to a mixing bowl and thoroughly incorporate.

6. Time to scoop! Scoop 2 tablespoons of dough and place them onto your lined cookie sheet (Heaping tablespoons are fine if you are not looking for uniform cookies. Place the cookies about 2-3 inches apart horizontally and about 1-2 inches apart vertically)

7. Place cookies in the oven and bake for 20-25 minutes depending on preference and oven bake times.
Now that our cookies are baking, let us get started on our icing!
I do have to say, upon making this icing I found it has the perfect sweetness that balances out our slightly savory cookie! It's seriously so yummy you could eat it by itself!
Cinnamon vanilla icing!
What will I need?
Unsalted sunflower seeds (I'm sure cashews, pecans, pumpkin seeds, or any other seeds would do just fine)
Cinnamon (I used ground but freshly grated would take this to another level of fire!)
Vanilla extract (I personally have never been picky about a brand, as long as it is animal derivative free we're good)
Oat milk
Powdered sugar (Store-bought sugar can not always be trusted so just blend cane sugar and a little cornstarch and you have made your own!)
For a slight background as to why I used sunflower seeds as the base, I looked around for something to add besides sugar and more sugar and became curious as I saw the seeds laying on my counter. They seriously add a smooth, rich, and slightly nutty flavor profile that invited the cinnamon and vanilla extract to come party!
Icing time, do I just blend everything together?
Add sunflower seeds, cinnamon, vanilla, oat milk, and sugar and blend until smooth consistency
Drizzle over cookies and wait for 5-10 minutes until they set!
